Red Cabbage & Apple Slaw
Prep Time: one hour
Serves: 4-5
===Ingredients===
Vinaigrette:
* 1 minced shallot
* 1/2t Dijon
* 1t sea salt
* 1t horseradish
* 1/4 to 1/2 cup cider vinegar
* 1 to 2t sugar
* 1 orange, zested on microplane
Cabbage-Apple Slaw:
* 1/2 head red cabbage, shaved
* 2 granny smith apples, julienned
* 2 carrots, julienned
* 1 small red onion, shaved
* 1 bunch scallions, sliced into thin rings
* 1/2 bunch cilantro, chiffonade
* 1 to 2t mayonnaise
* Salt to taste
===Technique===
Vinaigrette:
In large bowl, mix together ingredients and let sit for 20 minutes.
Cabbage-Apple Slaw:
Place cabbage into vinaigrette and let sit for 20 more minutes. Then add remaining ingredients except mayonnaise and salt; mix together. Add mayonnaise and season with salt.
