* 1 ripe mango diced * 1 cup of frozen corn * 1 medium tomato diced * 1 cup black beans (can or cooked) * zest and juice of 1 lime and 1 orange * 2 tablespoons olive oil * 2 cloves garlic minced * 4 green onions sliced - white only (or 1 small red onion diced) * 1 green pepper diced * 1 teaspoon cumin * 1 1/2 teaspoon salt * 1 tablespoon Mrs Dash Fiesta Lime (my 1 cheat for this recipe! If you like spicy foods add 1/2 teaspoon cayenne). Mix all together and refridgerate for at least 2 hours to let the flavors mix. Mix and taste prior to serving and adjust seasonings as needed.
