* 2 Cucumbers * 1 Bunch Spring Onions * 250g Halloumi * 2 Tbsp Tahini * 1 Tbsp Soy Sauce * 2 Tbsp Crispy Chilli Oil - Gently bash the cucumbers with a rolling pin until they break up into large pieces. Chop these up into bite-sized pieces then roughly chop up the spring onions. - Chop up the halloumi into small slices and pan-fry them with a glug of olive oil for 2 mins on either side until golden brown and crispy. - In a large bowl, add in your tahini and 3 tbsp of boiling water. Whisk well until smooth then add in the soy sauce and crispy chilli oil. - Add the cucumbers, halloumi and spring onions to the dressing.
