* 3 cans of beans, drained and rinsed well. (I usually go for black, kidney and canellini, just for the color assortment.) * About 1 can of frozen corn * 1 small onion (or better, half of a red onion) finely chopped * 1 or 2 red peppers, finely chopped * One large bunch of cilantro, finely chopped Put in a bowl with a lid. Drizzle a little olive oil on top. Add about twice as much white vinegar. Add a few tablespoons of sugar. Mix well and taste. Season with a little salt.
