Coconut flour is extremely high in fiber. Add a tablespoon or two to smoothies, beverages, baked goods, casseroles, soups, and hot cereals. For baking: * Combine a little coconut flour (generally 1/4-1/2 cup) with other flours in standard recipes. Decrease the other flour by that amount. Since coconut flour is much more absorbent, add an equal amount of water or other liquid to match the amount of coconut flour. * 1 cup of wheat flour + 1 cup of water = 3/4 cup wheat flour + 1/4 cup coconut flour + 1 1/4 cup water * For quick breads, you can replace 10-20% of the wheat flour with coconut flour.
