Keto tabouli salad (using cauliflower instead of bulgar). This was delicious. Found the recipe on IG courtesy of ShredHappens. * Process a head of cauliflower in the Food Processor until snowflakes. * Dice 4 Persian (mini-cukes) cucumbers finely. * Dice 4 large Roma tomatoes, de-seeded. * Chop 2 large bunches of flat parsley, and a big handful of fresh mint. * Slice 5 scallions. Mix all together. Dressing: juice and zest of two lemons, 2 cloves of finely minced garlic, 1/2c. good quality olive oil, lots of salt, black pepper. Snowflakes: - Grab a whole head of cauliflower and wash well and dry. - Roughly cut the cauliflower into florets. Nothing needs to be really exact, just enough to get it inside the processor. - Take out a food processor and throw in your cauliflower florets. - Pulse until they are into small snowflake sizes. Don’t over do it, 5-6 seconds is generally all it takes - Remove, then store in an airtight container.
