* 4 1/2 lbs chicken thighs * 7 -10 ounces fresh spinach * 5 teaspoons salt * 2 teaspoons ground black pepper * 2 teaspoons dried sage * 1 teaspoon dried thyme * 4 garlic cloves - Remove the bones from the chicken thighs, leave the fat on.
